Growing ice crystals is easy and can be done with sugar, borax or epsom salt.  Our instructions are for sugar crystals, aka Rock Candy, because they are as fun to eat as they are to look at.

Ingredients:
1. 3 TB sugar
2. 1 Cup water
3. glass jar
4. pencil
5. cotton or wool string (NOT nylon)
6. pan and spoon
7. food color (optional)

Step 1.
Tie string to pencil and place pencil over mouth of jar.  String should not touch sides or bottom of jar, but be very close to bottom.  After you have the string the perfect length, remove from the jar and proceed to Step 2.

Step 2.
Boil water.

Step 3.
Slowly add sugar to boiling water, one teaspoon at a time.  Stop adding sugar when it accumulates on the bottom and will not dissolve.

Step 4.
Add a few drops of food color.

Step 5.
Pour sugar solution into glass jar.  Be careful to not let any undissolved sugar get into the jar.

Step 6.
Now place the pencil on the jar, letting the string dangle in the center.

Step 7.
Place jar in a safe and secure area and let the incubation begin.  It will take anywhere from a few days to a week for the crystals to grow.
